Grape: 100% Chardonnay from vines averaging 35 years old, cultivated according to sustainable principles (Lutte raisonée) with only minimal use of chemicals.
Based in the village of Corpeau since 1860, restauranteur Jean-Charles Fagot took over the domaine from his father in the mid 1990s. Harvesting early in order to retain as much freshness and acidity as possible, Jean-Charles has produced a generous Saint Aubin Premier Cru which has been fermented and aged in French oak barrels for 12 months.
St Aubin is located between the famous villages of Puligny and Chassagne Montrachet and produces wine of a similar style.
Notes of green apples, mint, pear, white flowers and gingerbread. The style is clean, straight and elegant with plenty of juicy fruit and a nice fine structure.
Drink with fish dishes, such as Parma ham wrapped roasted bream, or poultry including Breese chicken breasts with truffles.
