Ice Riesling Tsarev Brod Winery, Bulgaria, 2020, 20cl
Grape: Riesling, harvested after the first snowfall of the season, usually late November or early December. Aged for 12 months in used French oak barrels.
The longer the grapes hang on the vines, the smaller and more shrivelled they get, losing water with each day, thereby concentrating the natural sugars in the grape. By the time of the first snowfall, the grapes get encrusted in ice and, as a consequence of the sugar concentration, produce very little wine. For every 100 kg of grapes, they get just ten or so litres of wine.
A beautiful golden colour with amber hues. Sophisticated and very tempting aromas of fig jam, dried flowers, raisins, orange peel, apricot, quince and honey. Very good balance between the sweetness and the acidity, great noble development and lovely long finish with notes of bee wax, honey and acacia.
Food Match: It can be a dessert on its own, or paired with fruit desserts (especially with pumpkin), also with foie gras starters
