Grape: 100% Chardonnay, 60 year old vines, manual harvest, lees aged, unoaked

This Premier Cru comes from the Vaillons appellation, situated on the left bank of the river Serein, giving the wine plenty of dry stone minerality. Aromas of iodine and oyster shell. The palate is very saline, rich with citrus fruit and steely acidity.

"Smells even more creamy than the Fourneaux, suggesting a lees effect even before you put the wine in your mouth. Herbal, stony green fruits, citrus purity and a slight grip in the texture that gives the wine impressive length and depth. Perfect balance between freshness, texture and pure fruit. Needs time, as do all these Billaud premiers crus." Drink 2025 - 2035

Samuel Billaud is one of Chablis’ finest winemakers. For over twenty years he has been responsible for some of the best wines produced in Chablis. He established his own winery in 2009 and, in 2014, his estate was greatly extended when he recovered his share of the Domaine Billaud-Simon vines after the family estate was sold to Faiveley. He has now built a new winery in the centre of Chablis where he ferments the wines in a mixture of stainless steel vats and 450 litre demi-muids (for premier & grand cru wines).
