Bobal is the third most planted red grape variety in Spain. It's grown widely in the eastern Spanish regions of Utiel-Requena and Valencia where it produces wines which are soft and fruity. With flavours of blackberry, pomegranate, black tea, cocoa and liquorice, the dark skinned grapes have a high acidity level and the wines have plenty of colour, often used for blending with other local varieties. The most well known food pairing is with the traditional rabbit & sausage based paella dish, but most lighter meats work well along with medium cheeses such as Manchego.
